Here is one of our favorite, BBQ, summer meals!!

Teriyaki Chicken and Glop
( I know, not too appetizing calling it Glop but you will love it!)

chicken breasts, boneless, skinless
teriyaki baste and glaze...Kikkoman or any THICK glaze
hamburger buns
Glop:
tomatoes
green onions
mushrooms
chopped black olives
Wishbone Italian Salad Dressing..not low fat, or low oil!

Marinate boneless, skinless chicken breasts in Kikkoman Teriyaki Baste and Glaze. (For 8 breasts I usually use 1 1/2-2 bottles).
I marinate for at least 8 hrs...overnight is best and be sure the chicken is covered in glaze!!

Chop tomatoes, green onions, mushrooms and olives and combine in a large bowl. Chop small because this is supposed to be eaten as a sandwich. The amount of each depends on the number of people you are serving. You don't want to run out of the glop mixture and it keeps for a few days for left-overs!! **I do not like olives so I serve them separately for those who do! Also, buy canned chopped olives and pre-chopped mushrooms to save time!

When you have enough veggies chopped, pour Italian dressing over and stir; cover and refrigerate until serving.

BBQ the chicken breasts; grill the buns if you like, too. One serving is: chicken breast on bun, cover with glop mixture, and either eat open-faced with a fork or cover with top bun and eat as a sandwich...with glop running down both elbows!!

**My DH likes a little mayo spread on both halves of the bun before the chicken and glop go on...good but not necessary!

A yummy recipe for Holiday brunch, or anytime of year!

Chili Rellenos Casserole

6 eggs, beaten                                       1 13oz can of evap. milk
1 7oz can whole green chilies                 1 lb. grated Jack cheese
1 7oz can chopped green chilies             1 lb. grated cheddar cheese
1 tbsp vegetable oil                                salt & pepper to taste


1. Slit whole chilies, spread flat, remove seeds, rinse, drain and dry with paper towels.
2. Oil bottom & sides of a 9"X13" pan (or 2 9" square pans).
3. Spread whole chilies in bottom of pan, skin side down.
4. Sprinkle half of each cheese, beginning with Jack cheese, on top of the whole chilies.
5. Spread drained, chopped chilies over the two layers of cheese.
6. Combine remainder of Jack and cheddar cheeses and sprinkle on top of the layer of chopped chilies. Salt and pepper lightly.
7. Combine beaten eggs and evaporated milk then pour over top of casserole.
8. Bake at 350 degrees F for 45 minutes.
9. Serve with your favorite salsa and sour cream on top. Also good with chopped tomatoes on top!!

Pumpkin and chocolate chips combine for a yummy bread....I keep it around through the holidays for snacks, to serve guests and it's great to make in small loaves to give as a gift!!

Chocolate Chip Pumpkin Bread

1 3/4 C flour                                    2 eggs
1/2 tsp each salt & nutmeg              3/4 C canned pumpkin
1 tsp each baking soda & cinnamon   3/4 C semi-sweet choc chips
1/4 tsp each ginger & cloves            3/4 C walnuts (optional)
1/2 C butter
1 C sugar

1. Combine dry ingredients, except sugar, and set aside.
2. Melt butter and combine with sugar and eggs. Alternate adding
    the butter mixture and the canned pumpkin to the dry
    ingredients until all mixed.
3. Pour into a greased loaf pan. You may pour into small individual
    loaf pans for gifts.
4. Bake at 350 degrees F for 65-70 minutes.

Another yummy brunch/breakfast casserole recipe....this one is sweet!!  Must be prepared the night before and refrigerated!

French Toast Souffle

16 oz. cream cheese, cubed
16 slices French bread, trim crusts and cube
12 eggs             2 C milk               1/2 C maple syrup
nutmeg and cinnamon

1. Put a layer of 1/2 of the bread cubes in the bottom of a 9X13
   baking pan.
2. Cover the bread layer with the cream cheese cubes; sprinkle
   with nutmeg and cinnamon.
3. Add another layer of the remaining bread cubes on top.
4. Beat eggs; add milk and syrup mixing thoroughly; pour over top
   of casserole.
5. Cover and refrigerate 24 hours.
6. Just before baking, sprinkle with more nutmeg and cinnamon.
7. Bake at 375 degrees F for 45 minutes.
**Serves 6-8 easily. Serve with warm maple syrup. YUMMY!!**

These are great served with the French Toast Souffle and also a tasty hors d'oeuvere!!

Lit'l Smokies

1 lb. Lit'l Smokie Links (made by Hillshire Farms)
1 lb. bacon                     3/4 box of brown sugar (approx. 1C)

1. Cut all bacon slices in thirds.
2. Wrap each Lit'l smokie link in bacon and secure with toothpick.
    Place in single layer on a baking sheet.
3. Sprinkle with the brown sugar.
4. Bake at 250 degrees F for 2 hours!
**Figure at least 3-4 per person and hope they stick to it!! Most
   will want more and some will eat many more!!**

A yummy casserole to make ahead, refrigerate and then pop in the oven after a full day of shopping or holiday preparation!

Heavenly Hamburger

1 lb lean hamburger                             dash of pepper
2 Tbsp butter                                      one 8 oz. pkg noodles
1/2 garlic clove                                    6 green onions, chopped
two 8oz cans tomato sauce                  one 3 oz pkg cream cheese
1 tsp salt                                              1 C sour cream
1 tsp sugar                                          1/2 C cheddar cheese, grated

Brown beef in butter. Add minced garlic, tomato sauce, salt, sugar and pepper. Simmer about 20 minutes. Cook and drain noodles. Combine onions (tops too) cream cheese, and sour cream. Alternate beef mixture, noodles and cream cheese mixture in layers in a greased casserole (I use a Pyrex 2 qt. round casserole!). Top with grated cheddar cheese.  Bake at 350* for 20 minutes...a little longer, 30-35 min, if it has been refrigerated!  Serves 8
